Eggselent Omelet Cups:

Try this fun variation on an omelet. Easy to make and easy to refrigerate for easy snacks on the go.

. 4 Eggs

. 1/2 Cup of spinach chopped

. 4-5 Medium white mushrooms

. 2 Tablespoons of shredded cheese (your choice)

 

Preheat the oven to 400F. While the oven is heating up, crack the eggs and whisk them into a bowl. Chop up spinach, mushrooms and shred the cheese. Take a muffin pan and pour the whisked eggs into the silicone muffin cups (makes for easy clean up). Once in the muffin pan add the above spinach mushrooms and cheese and bake for about 10-12 mins. Remove, cool down for a few mins and serve.

 

Great for breakfast, snacks or dinner served with a side of salad.
